Rukab's Ice Cream

In 1941, the Palestinian Rukab family opened a modest ice-cream factory in the city center of Ramallah, which later became world-renowned. Ice cream is made in the shop in the traditional way, despite the development of the automated capabilities that make it, as the factory began producing five types of ice cream, which are “milk, lemon, strawberry, pineapple, and chocolate.” Today, it produces about 30 flavors of ice cream, including the five main flavors that it began to manufacture in the forties of the last century. Rukab ice cream is distinguished by its chewy texture and is served to customers all year round, in addition to the use of Arabic mastic, which gives a special and unique taste to the ice cream served.
